Anti-Inflammatory Pesto
OMG...I could eat this anti-inflammatory Pesto all day long AND it's not too late to make up a few batches to freeze before the winter months!
Did you know that the volatile oils in basil contain a compound called eugenol, which mimics the action of over-the-counter anti-inflammatory medications such as ibuprofen and acetaminophen? (J. Danulik, RHN).
2 cups basil leaves (tightly packed)
3/4 cups extra-virgin olive oil
1/2 cup raw sunflower seeds (or hemp hearts)
2 to 6 cloves garlic
1/2 tsp grey sea salt or pink rock salt
2 tsp lemon juice
Combine in a food processor and blend until smooth
